If you're stuck for a quick nutritious meal, here is a winner. All it calls for is 6-8 cups of good organic chicken broth and a bag of ready to cook tortellini. Add a spiced up version of garlic bread and you have a lovely meal in under an hour. For my garlic bread I add a teaspoon or more of Thai garlic chili paste to my butter/garlic mixture. Since the soup has a quiet flavor, the spicier bread pairs with it perfectly.
In a 4-6 quart pot, add the chicken broth, a dash of kosher salt and some cracked black pepper. Bring it to a boil and add the tortellini. I use Barilla's bagged tortellini. The smaller 8 ounce bag is enough for 3 people. If you are feeding 4 or more, the 13.4 ounce will do. Just before serving, snip some chives to sprinkle over your bowls of soup, and have some freshly grated parmesen cheese on the table.
Finish off with a warm apple tart or pear gallete with a scoop of ice cream. Yumm!
