Well, I've only babysat a few times over the past few weeks due to the holidays, so not much to report.
This was a concoction I came up with based on the idea of a banana split, but without the ice cream. I figured it was unhealthy enough with the holidays sprinkles and hot fudge/caramel sauces. Topped with Spanish peanuts.
This was a soup I made using a little of this and a little of that: leftover ham, canned diced tomatoes, corn, onion, garlic, lots of cumin and chili powder and instant rice. Served with a grilled cheese.
It's still fun making stuff for the kids, and I am going later now, so I make everyone dinner. They appreciate coming home and having a meal ready and I love to do it!
Last night I made ground beef tacos with easy Spanish style rice. I cooked the rice and diced tomatoes with a taco seasoning packet, and added corn, green chiles and cheese at the end. The kids loved it!
