extra ing. 1.onion, 2.mozzarella and 3.sugar
Cut squash in half and drizzle with some oil, scoop out the seeds and discard, bake until tender, then scoop out some of the flesh and mix with the cooked barley adding some sauteed onion. Refill the squash hulls and top with some shredded mozzarella cheese. Pop back into oven until cheese melts. Thaw the berries add a bit of sugar and sprinkle with the spice, top with some of the crushed cereal and bake until warmed thru.
extras: marshmallow topping, beef broth, butter
In butter, cook squash til soft. In a large pot, add broth, barley and pureed squash. Cook 1 hour, stirring often.
Mix marshmallow topping, a little melted butter and rice crispies. Press into buttered ramekins. Mix fruit and spice. Pour into "crust". Refrigerate one hour.
beef ribs, cabbage, cream
First course:
Cook beef ribs, slivered cabbage, chunks of delicata squash, barley, salt and pepper together into soup.
Second course:
Squash casserole made by cooking chunks of butternut squash and mashing. Beat with cream and pumpkin pie spice then top with rice krispies; bake.
Dessert:
Nuke berries until warm; pour on cream and serve.
To serve: Enjoy soup and dessert. Feed the nasty pie spice-flavored (yuck) casserole topped with cereal (another yuck) to the neighbor's dog. Two items never found in my kitchen.
squash and barley soup
Vic, I get mine at a small natural food market. Try in the soup aisle, maybe?
Aww, Shannon, gimme some credit for figuring out how to make a recipe with ingredients I **hate** (any and all cold cereals, and pumpkin pie spice) and still end up with the platter licked clean!
