WILD RICE CASSEROLE
INGREDIENTS:
1 cup wild rice
1 chopped onion
3 stalks chopped celery
1-2 cans sliced mushrooms, drained
1 can sliced water chestnuts, drained
1 tsp. seasoned salt
1/4 tsp. pepper
2 Tbsp. butter
1 quart chicken broth
1/2 cup slivered almonds
DIRECTIONS:
Wash rice. I put rice in a strainer with TINY holes and pour boiling water over it. Some people prefer to rinse with cold water.
Combine all the ingredients. Place in a casserole. Bake covered at 325 degrees for 2 hours or until all chicken broth is absorbed. May be prepared in advance. This freezes well. Recipe can be doubled.

It is expensive, Rachel, but a nice splurge for something special.
You are right, Ness. Chicken or turkey would be an excellent addition.

JC! There won't be any left. I actually made it again for our dinner today. It's in the oven as I write this and smells pretty darn good! Just ring the bell and come on in ...
Alison,
I think it's a nice side with ham, baked chicken, turkey, grilled steak ...
at Christmas, so I'm going to
use your recipe and make this.
Thanks.
