ARTICHOKE AND CHICKEN CASSEROLE ~ repost
3-14 oz. cans artichoke hearts, well-drained
1# fresh mushrooms, sliced
(Saute mushrooms in 3T. butter until tender, drain)
8 baked chicken breasts, cut into fork-sized pieces
1 can pitted ripe olives, drained
Combine the above and put into greased 9x13 pan.
Mix together the following and pour over the chicken mixture:
2 cups Heinz chicken gravy
2 cups diced or shredded Swiss cheese (add to warm gravy)
1/4 tsp. marjoram
2 T. dry sherry (optional)
Toss 1 T. melted butter with the following and sprinkle over top of the chicken:
1/2 cup bread crumbs
1 tsp. Parmesan
pinch paprika
Bake uncovered 50-60 minutes at 350 degrees. Add fresh parsley to the top.

Question: If you are starting with baked chicken breast, and then bake a further 50-60 minutes, wouldn't the chicken get really dry?
