Today I made peanut butter balls, mounds candy and some cream cheese, pineapple, coconut balls. A lady I work with gave me the last recipe. It's really easy and I just took an 8 ounce package of cream cheese, a well drained 8 ounce can of crushed pineapple and stirred them together. Let it sit in the bowl in the fridge for thirty minutes then rolled it into 1 inch balls. I then rolled them in coconut and placed them back in the fridge. They are supposed to stay there at least 6 hours but best if left overnight. Looking forward to trying them.
While I was making candy my daughter was busy baking cookies. Today she made the chocolate covered cherry cookies, the butterscotch cashew bars, some no bake fudgies and has chocolate chip in the oven now. She has gingerbread dough in the fridge waiting to be rolled and cut out. She made her lemon and chocolate almond biscotti a couple days ago as well as some chocolate chip Zwieback cookies. This is the first time she's made the zwieback and they are really good. I think she has two more to make but don't remember what they are at the moment.
Tomorrow we'll help Mom make some corn salad, marinated slaw and maybe do a few other things to help Christmas Dinner along.
The house sure smelled good on this rainy cool day in NC. Anyone else been making holiday goodies? Wishing all my Gather friends who celebrate a very Merry Christmas.

I brought the fudge to the holiday party at Trevor's karate school and there wasn't a crumb left! The only baking I've made was a new variation on focaccia that had parmesan cheese on top. It came out ok, not great. I think I over-baked it slightly.
No holiday baking. That is over with. I am making appetizers to bring to a friends house on Tuesday though - stuffed cherry tomatoes, stuffed mushrooms and hummus.

Risa, Sarita made fudge at Mom's last week. I got to take a few pieces to work and share with the ladies I eat lunch with. They loved it. You're focaccia sounded good. I just saw your article. We are planning an appetizer dinner for between Christmas and New Year's. We'd have loved to have you join us in the kitchen.

Vicki, the lady who told me about the recipe said her husband adores them. My hubby loves pineapple, cream cheese and coconut so I thought these would be perfect for him.

Carolyn you're right ingredinets can be expensive. My daughter's future MIL gave her a $50 Lowes Foods card to buy cookie ingredients with. She wanted Biscotti and was afraid she might not get any since Sarita told her she didn't know if she'd be able to purchase all the ing. she needed since she hasn't gotten to work much this year.
