My daughter, Sarita make her brother, Dexter these cookies last year from the Land O' Lakes 2006 Holiday Cookie Magazine and he requested them again this year. The recipe is also on the Land O' Lakes web site this year.
BUTTERSCOTCH CASHEW BARS
Preparation time: 15 min Baking time: 20 min Yield: 36 bars
Crust Ingredients:
| 1 1/2 | cups all-purpose flour | |
| 3/4 | cup firmly packed brown sugar | |
| 1/2 | cup Land O' Lakes Butter, softened | |
| 1/4 | teaspoon salt |
Topping Ingredients:
| 1/4 | cup light corn syrup | |
| 1 | cup butterscotch-flavored baking chips | |
| 2 | tablespoons Land O' Lakes Butter | |
| 1 | tablespoon water | |
| 1/4 | teaspoon salt | |
| 1 1/2 | cups cashew halves and pieces |
Heat oven to 350° F. Combine all crust ingredients in large bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press crumb mixture into greased 13x9-inch baking pan. Bake for 10 minutes.
Meanwhile, place all topping ingredients except cashews in 2-quart saucepan. Cook over low heat, stirring constantly, until chips are melted and mixture is smooth (4 to 7 minutes). Stir in cashews until well coated.
Spread cashew mixture over hot, partially baked crust. Continue baking for 10 to 12 minutes or until golden brown. Cool completely. Cut into bars.
