I made this last night. It's so fast and easy. And good. Really, really good. Sorry, no photos. Too tired!!!
TORTELLINI SOUP - repost
Prep time: 15 minutes/Cook time: 5 minutes
INGREDIENTS:
3 cups water
2-14-1/2-ounce cans Italian diced tomatoes, undrained
2 cups chicken broth
1 teaspoon dried basil, crushed
1/2 teaspoon dried oregano, crushed
1/4 teaspoon pepper
1-16 oz. loose-pack frozen broccoli, cauliflower and carrots
1-9 oz. pkg. refrigerated cheese tortellini
1 can dark red kidney beans, rinsed & drained
1 can black beans, rinsed & drained
2 Tablespoons snipped fresh parsley
Grated Parmesan cheese or shredded cheese
DIRECTIONS:
1. In a medium saucepan, combine the water, undrained tomatoes, chicken broth, basil, oregano and pepper. Bring to boiling. Stir in frozen vegetables and tortellini.
2. Return to boiling; reduce heat. Simmer, uncovered, for 5 to 6 minutes or until tortellini are tender. Stir in kidney beans and parsley. Heat through. Sprinkle cheese on top. Makes 8 servings.
