I like to bake an egg dish called frittatas.
I use 2 pint cartons of egg substitute, mix the substitute with 1/4 to 1/2 cup of skim milk, spices, nuts, or crunchy vegetables and bake it at medium heat for 15-20 minutes in a spray-coated 13x9 pan.
You can also cook then frittatas as mini quiches - just pour the mixture into a cupcake pan lined with cupcake holders.
