As many of you know, my hubby works out of town. If I'm lucky, he's home about 8 days out of the month and its not 8 days in a row either. He'll be home for 3 here, 2 there, and so on. We never know when he's gonna be leaving out or when he's gonna be coming in. Its a guessing game with his job but it pays decent so I'm not complaining.
So, today my hubby called to tell me that he will be home earlier than expected next week and his boss is giving him 3 weeks off for the holiday since they already have more than enough hours to cover for a full months pay. 3 weeks in a row, I'm not sure what I'm gonna do with myself having him home that much. Which also means that he will be home for Christmas and New Years. Last year his brother who he works with had to leave out on Christmas, I was praying that it wouldn't happen to us this year, it would have killed my daughter not to have her daddy home for Christmas.
Now, I'm trying to figure out what I can cook for dinner that won't be too time consuming and won't take a lot of clean up and I'm coming up empty handed. I won't have to cook for Christmas so thats good but he will want to have a lot of home cooked meals since he eats out so much its the least I can do in my opinion to cook him some good home cooked meals.
I'm going through my recipes and hoping I can find at least 15 good ones so that I won't have to go grocery shopping but one time (except for milk) while he is in. Walmart is so packed at this time of the year and unfortunately its the cheapest place to buy groceries around here that won't cost you an arm and a leg to feed a family of 3.
I just had to share my good news with yall. So if I'm not on much for the next few weeks you will know why. I'm gonna try to slip on while he's playin his guitar and while he's sleeping in, in the mornings but I won't be able to spend as much time on here as I do while he's gone.

I slice potatoes on the bottom of a baking pan... then in a bowl i mix 2 cans of cream of chicken, but you can use a cream of anything can of soup.. 2 cans of milk... then add cut up ham... pour over top of potatoes... you can add cheese and sprinkle some on top..
i put in oven at 350 or 375 until the potatoes are done..

Do you like to make soups? I know an awesome Chicken Leek soup that we love amd a really good baked potato soup as well.
