Reading Sheila's gingerbread story made me long for some, so I dusted off the recipe we have been using in my family for the last 45 years and took it vegan too! You can make it either way...
Gingerbread
1 c molasses
½ c sugar
½ c oil (I would go with sunflower here)
2 eggs (leave out for vegan version)
2 c flour
(vegans substitute ½ cup cornstarch or potato starch for ½ c of the flour and add 5 t baking powder)
½ t ginger
¼ t allspice
1 t cinnamon
2 t baking soda
1 c boiling water
Mix ingredients together in order given, up to and including cinnamon. Dissolve soda in boiling water. Stir rapidly into dough. Bake in paper-lined pan for app. 40 minutes at 350°F (200°C).

I'm crazy about Gingerbread. I can smell gingerbread a 100 meters away.
It makes me think of home and a house full of laughing people. Of my mother taking spicy things out of the oven.
