This recipe was passed down to me by a girlfriend who has a catering service here in Dallas and I so loved them that I had to have the recipe so here in all of its glory it is for you as well!
24 unpeeled medium (or large) size shrimp
24 jalapeno peppers
12 bacon slices, halved lengthwise
Peel shrimp, and devein, if desired. Cut a slit in each jalapeno pepper; remove seeds and membranes (if desired). Carefully place one shrimp in the cavity of each pepper. Wrap each pepper with a bacon piece and secure with a wooden pick. Grill 6-7 minutes on each side, or broil in oven until bacon is cooked.
