- 2 1/2 tbls. quick cooking tapioca
- 2 cups frozen mixed blueberries, boysenberries, raspberries and blackberries (available at CostCo)
- 1 cup fresh strawberries
- 1 cup fresh cranberries
- 1 medium orange
- 1 1/4 cup sugar
- 1/4 teas. salt
- 1/8 teas. cinnamon
- Two premade, raw pie crusts
- 1 pie tin
Step One
Put all berries in a bowl together. Try to pop some of the cranberries. Preheat your oven at 400 degrees.
Step Two
Add spices, sugar, tapioca. Stir.
Step Three
Slice orange in half and squeeze both halves over the mix in bowl. Grate a little of the zest from the orange and add this as well. Stir, then let sit 15 minutes.
Step Four
Place one of the raw pie crusts in a 9" pie tin. Pour in berry mixture, then place the other crust on top and flute the edges. Cut some holes in top crust to vent.
Step Five
Place pie in oven and bake for about 40-50 minutes or until bubbles rise slowly to the top and then pop.
