This cook wasn't stumped. Sue S. (http://ss4000.gather.com/) came up with this wonderful meal using the following five ingredients as the base:
1 whole chicken
1 cup frozen peas
scant handful fresh cilantro
1 T sesame seeds
4 fresh pears
You also get to use water, salt and pepper, oil and up to three other ingredients.
The three extra ingredients were 1 cup flour, 1/4 cup milk and 1 t baking powder.
In a large pot, boil the chicken with salt and pepper til very tender, about 1 1/2-2 hours. Reserve cooking broth. Remove the meat from the bones and shred. Remove about 2 cups cooked chicken.
In a Dutch oven or pot, add about 3 T vegetable oil. Heat on medium heat. Whisk in 3 T flour to make a roux. Cook for a few minutes and whisk in a little reserved broth along with milk. Cook white sauce for about 10 minutes, or til thickened, adjusting as needed. Add salt and pepper to taste.
Preheat oven on 375°F. Spray a large glass pie plate with cooking spray.
Stir the chicken, cilantro and peas into the white sauce and heat through. Pour mixture into prepared pie plate.
Make a biscuit dough from remaining flour, milk and baking powder and put in dollops over the creamed chicken. Bake pie til biscuit topping is brown and puffy, about 45-60 minutes.
Meanwhile, toast the sesame seeds in the oven til just browned, being careful not to burn. Set aside.
Once pie is baked, remove and let rest for about 10 minutes. Turn on broiler.
Slice the pears in half and core. Bake under the broiler til tender and cut side is caramelized, about 15 minutes. Sprinkle with toasted sesame seeds for dessert.
