This recipe appeared in our magazine that comes with our electric bill many years ago and Mom has been making them every since. I make them too and so does my mother in law. Between the three of us we've used many different kinds of fruit. In the summer we often use fresh strawberries, blackberries, blueberries, peaches and even rhubarb. In the winter it's great because you can use canned peaches, pineapple, pears or whatever and it's just as good.
Lazy Day Cobbler
Melt stick of butter or margarine in a casserole dish big enough to hold all ingredients. Mix together 3/4 cup milk, 1 cup self rising flour, and 1 cup sugar. Pour over melted butter in pan. Top with around 2 cups of any kind of fruit. If using canned use the large size of pineapple, pear, peach or whatever. Bake at 350 for 30 minutes or until golden brown. My oven often takes around 45 minutes. We also add one egg and a teaspoon of vanilla to the flour, milk sugar and this bumps it up a bit.
It's great warm or cold and a easy dessert to make. You could let your children help you stir one up for dessert anytime.
