O So Easy, Pasta E Fagoli
- 2 cups Whole Wheat Penne
- 1 can Cannelini Beans
- 1 can Kidney Beans
- 1 can Diced Tomatoes (Basil, Oregeno, Garlic)
- 1 zucchini Chopped
- 1/4 onion Minced
- 1 carrot Chopped
- 1 celery stalk Chopped
- salt and pepper to taste
- 3 cups Chicken Stock or Beef Stock (Veggie Stock will completely change the flavor of this dish, NOT RECOMMENDED)
Start a pot of water for pasta (Whole Wheat pasta takes about 2x the time to cook), When boiling add pasta
Spray dutch oven with cooking spray and add onion, zucchini, carrot and celery, sprinkle with salt and pepper and cook until onions are opaque
Add canned ingredients and bring to a boil... Stir and Serve
Top with parm and it is out of this world!!!
