I wonder if bulgur would work. It is nuttier but only takes a bit of time on the stovetop...
You have to copy and paste in your browser. Actually, I have some time so I've just been boiling the poor wheat berries to smithereens and they are an okay texture. The recipe also includes walnuts so maybe if someone gets a tough wheat berry they'll assume it is an oddly flavored nut.

I'm sorry Brett I missed that too - but you could probably make that substitute with ease. A white sauce would work in a pinch too.

We've got a 15.5 pound bird and are going to try the 450 degree technique that Lynne and her guest are talking about.
The question is, do we have to adjust the time of 2-1/2 hours for altitude?
We're at 7000 feet!
