Lentils come in all colors. Even red!
For all those of you who would like a simple, healthy meal one day this Holiday Season, here is:
LENTIL CREAM
Start with red lentils. Wash thoroughly, then simmer for about 45 minutes in twice as much water (by volume).
These turn yellow when they are cooked!
For this recipe, they are done when they turn to mush if you stir them.
Now you can refrigerate the lentils till you want to eat some!
When it's time for some food, heat up as much of the lentils as you need. The mush will have firmed up quite a bit in the meantime, so stir while heating. Add coconut milk, soy milk, cow's milk or water till you get the desired consistency. Flavor with a bit of instant broth, a smattering of apple cider vinegar, salt and pepper.
Serve over diced tomatoes, with a little soy sauce drizzled over all. If you add rice to this meal, you get a complete protein, without any meat!

There are lots of ways to cook most anything - I am always looking to make things vegan because part of my extended family chooses to eat that way. When we are all together it is a question of my wanting to serve food we can all enjoy together, with as little as possible need for "segregation." So I often experiment a bit, and if something turns out tasty, I like to post it here for others to enjoy!
LOL, you know it is a regular meal at our home, we eat three times a week, not only red, but there are 7 others. Chickpea lentil is also famous one.

Yes Shah, I know there are lots of different kinds. I like to shop in Middle Eastern grocery stores, and the choice is huge. I love it! Also dry-roasted chickpeas, to mention just one.
Glenn, you are right! My Mom often cooked lentils - but it was another kind... never red or yellow.
