We like to take a cheese ball or log out of the fridge about a half hour before serving. It is much easier to scoop that way!
1 T butter, softened
3/4 cup minced onion
1 (8-ounce) package cream cheese, softened
1 1/2 cups shredded cheddar cheese
1/3 cup plus 2 T fresh parsley, chopped
pinch of pepper
Melt butter in a medium frying pan or skillet; add onion. Cook over medium heat, stirring occasionally, til onion is golden brown and caramelized nicely. Remove from heat and cool completely.

Stir cream cheese in a medium bowl til smooth. Stir in onion and remaining ingredients (except 1/3 cup parsley); mix well.

Spoon mixture onto waxed paper. Cover with plastic wrap; refrigerate for 1 hour.
Shape cheese mixture into a log; roll in 1/3 cup parsley to coat. Re-wrap in plastic wrap. Refrigerate at least 2 hours before serving for best flavor.
Serve with your favorite crackers.
Variation: Add finely chopped walnuts or pecans.
