Since I have no time to creat a new vegan Thanksgiving meal, here is last year's spotlighted again... Enjoy!
Rosemary Potatoes
Meatloaf
Cole Slaw
Marinated Tofu
Cranberries
Lemon-Rosemary Cake
If you choose not to eat meat, this is a very good dinner to have, for Thanksgiving or any other day! Most of it can be prepared one or more days in advance.
Make Meatloaf and refrigerate.

It had snowed on the rosemary in the night!

Scrub and cook 6 pounds potatoes in their skins. Let cool.
Cut large potatoes in half. Mix all with a little salt, olive oil and chopped rosemary, spread out on very lightly oiled cookie sheet. Bake at 340°F or 175°C for about one hour.
Place sliced meatloaf on another oiled cookie sheet. Drizzle a little olive oil over all. I used some of my Dried Tomato Spread.
Bake with the potatoes. If you don't use a convection oven, make sure to rotate the cookie sheets.
Thinly slice a head of cabbage.
Mix with vegan mayonnaise and spice salt. Let stand for at least one hour. 
While the salad rests and the meatloaf and potatoes bake, cook one pound cranberries. I like them with just a little water and sugar. Use your favorite recipe here! 
The cake for dessert was inspired by reading a recipe by Katrina Hall: Rosemary Marmalade Scones.
While the cranberries cool, mix the dough for the cake:

1 1/2 pounds whole wheat flour mixed with 2/3 jar of lemon marmalade, about 2t chopped rosemary, 1/2c candied lemon peel, 3/4 pound very good margarine, 5t baking powder, a little sugar and a pinch of salt. Mix and cut until mixture is coarse and grainy. Add one cup soy milk (I used vanilla flavored) and mix gently just until everything holds together. Do not overmix.
Pat out on paper-lined sheet in two circles, each app 3/4 inch thick. You may need two cookie sheets. Score carefully - dough is very soft!
When potatoes and meatloaf are done, slip into the oven and bake at 350°F for app 30 minutes. Do not overbake!
Just before serving, add a handful of raisins and two thinly sliced, red-skinned apples to the cabbage. 
Serve with marinated tofu for color.

This was enough to feed a large family gathering (five teenagers and three adults) with a little (a very little) left over. Adjust quantities to your family!

Your photos are wonderful!!! Those rosemary potatoes sound awesome. Actually, the entire menu sounds delicious. And looks so pretty. But I do like turkey. Have to admit, I'd miss it on Thanksgiving. Thanks for your excellent post!!
This is a great aritcle with very good alternatives to turkey for Thanksgiving. Although I'll be at my daughter's house for the traditonal meal, I'm going to keep this and try it sometime after Thanksgiving. Thank you for these great ideas.

Nan, there's a link to the meatloaf - it's all soy...
I'm puzzled. Why would you do neatloaf on Thanksgiving when you actually like turkey? All that tradition! Personally, I hate both turkey and meatloaf, and would prefer a glazed bone-in ham, a rack of lamb or a standing rib roast of prime beef on the holiday.
Dorine, this meatloaf is vegan. I don't live a vegan lifestyle myself, but a significant number of people in my extended family have chosen to. I value cooking things we can all enjoy together, hence my quest for vegan food that EVERYONE will enjoy!

I cook my cranberries in fresh orange juice with unrefined sugar and a splash of vanilla. I've done them lots of different ways, but this one is my favorite.
I am definitely going to try that cake.
