This sandwich is made at an authentic sandwich shop near our home, although I have substituted leftover roast turkey in my version. It is one of my favorite sandwiches of ALL time!
My recipe specifically calls for good bread- the usual store bought loaves do not hold up well to all the toppings. The original does not call for cheese, but I love cheese on my sandwiches, and I always use a highly flavored white cheese. Mild cheeses (like a mozzarella or provolone) are usually overwhelmed.
sliced artisinal bread (like Zingermans)
hummus
leftover roast turkey
thinly sliced cucumber (I like English style)
roasted red peppers, well drained
thin sliced red onion (optional)
havarti or swiss cheese slices (or your favorite)
honey mustard sauce for dipping (your favorite variety. I always make mine from scratch with Dijon mustard)
Grill bread slices. Cool. Spread with hummus. Top with turkey, veggies and cheese. Served with sauce and chips or a pickle.

Another good sandwich combination. Love those artisin breads. They are usually heartier and have more flavor and wonderful crusts. Mmmmmmmmmmmmm.
