Mmmm. All of your choices sound delicious, even the planked salmon. But I'm gonna have to pull rank on all of you since it IS my question, after all. Until you have had Memphis barbecue you have only been playing around at having barbecue. In particular, the ultimate is a slab of ribs, slow smoked with a vinegar swab, then sprinkled with dry rub. Heaven on earth.
