Finishing up enjoying my day off here! And the thought of potato soup, as the weather outside continued to drop, just overtook me! No trip to the store, so I used what I had.
So this will not be posh, and I did use some convience products, like I said what I had hanging around.
5 medium potatos cubed small with skin on
3 to 4 cups of water 
1 very large onion peeled and diced
8 strips of bacon
1 small head of garlic peeled and diced 
1 cup sour cream
1 cup parmasan cheese shreaded
1 can cream of mushroom soup
1 can cream of celery soup
2 soup cans of milk 
garlic pepper salt to taste
cummin to taste
celery seed to taste
black pepper and salt to taste also had a cup of left over mashed potatos and 1/2 cup of cream gravy that I put in)
Boil the cut potatoes till tender 
saute the onions and garlic till lightly browned
cook bacon till crisp
when potatos are ready add onion garlic saute to the pot
(added in leftover mashed potatos and gravy here)
add in the two cans of soup mix and two cans of milk and lower heat and simmer
add in the seasonings....
Serve topped with sour cream, shreded cheese and bacon crumbles....(this is actuallywhat made it awesome!)
