Andes Creme de Menthe Cookies recipe
Makes about 38 cookies.
1/2 cup salted butter, softened
3/4 cup dark brown sugar, packed
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons vanilla extract
2 eggs
1 (10 ounce) package Andes baking chips
2 2/3 cups sifted all-purpose flour
Blend butter, sugars, baking soda, baking powder, vanilla extract and eggs until mixed. Stir in Andes Baking Chips, then stir in flour. Chill for approximately 1 hour in the refrigerator.
Raise oven rack one level above middle and preheat oven to 350 degrees F.
Measure out approximately 1 ounce of dough (about one heaping tablespoon); form ball and place on nonstick cookie sheet; flatten ball slightly. Continue with remaining dough.
Bake for approximately 8 to 10 minutes. Cool on pans for 2 minutes before removing.
Nutrition facts per cookie: 110 calories, 5 g fat, 4 g saturated fat, 20 mg cholesterol, 16 g carbohydrates, 1 g protein, 65 mg sodium, 0 g fiber
CHERRY CREAM CHEESE CAKES
3-8 oz. cream cheese bricks
1 cup sugar
1/2 tsp. vanilla
3 eggs
1 box Keebler vanilla wafers
1 can Wilderness cherry pie filling
Combine the cream cheese, sugar, vanilla and beaten eggs. Mix until smooth. Place 1 vanilla wafer in 48 2 inch foil "midget" baking cup (made by Reynolds Bakers Choice). Add cream cheese mixture. Place one cherry on top. Bake at 350 degrees for 15 minutes. Makes 4 dozen.
LORNA DOONE BARS
1 pkg. Lorna Doone cookies
Lay cookies flat in 9x13 pan
Combine:
12-oz. pkg. chocolate chips
1 cup butter
1 cup brown sugar
2 Tbsp. Karo syrup
Boil 2 minutes. Watch carefully so mixture doesn't burn. Pour mixture over the cookies and spread evenly. Cool. Cut into bars and serve.

Oatmeal Raisin
Peanut Butter
Caramel
any of these will do for me
