Title: Speedy Spanish Rice (improvised)

My husband & I were looking for a Spanish rice recipe & I remembered my mom had one in our family cookbook. I looked it up & I didn't have all of the ingredients & so I improvised & came up with a master piece :o)!
Ingredients:
1 1/3 Cups Uncooked Rice
1/4 Cup Cooking Oil
2 Cups Hot Water
1 tsp Salt
1/4 tsp Lemon Pepper
couple of squirts of lemon juice
1 (8 oz) can tomato sauce that includes oregano, basil, & garlic. (Hunt's)
Salsa (any hotness; your preference) (8 oz) see directions...
(Last night I added 1/4 yellow & orange bell peppers...I needed to get rid of them LOL I am sure you can add anything else you would like to this....)
Directions:
Brown rice in oil until lightly browned. Add water, salt, lemon pepper, lemon juice, tomato sauce, fill the tomato sauce can with the salsa & add to sauce. Bring to a boil then simmer, cover until rice is tender (on simmer heat). About 40 min.
Number Of Servings:4 or more (we fed 4 adults & 2 children & it went fast...)
Preparation Time:50 min

My husband made enchiladas too & mmmmmmmmmm were they good!
