2 lbs sweet potatoes, cooked -- mashed
1/3 cup orange juice
1 egg -- beaten
1 tablespoon grated orange peel
1/2 teaspoon ground nutmeg
1/4 cup chopped pecans
In a bowl, combine mashed sweet potatoes with orange juice, egg, peel, and nutmeg. Mix well. Spray a baking sheet with nonstick cooking spray. Spoon potato mixture onto baking sheet in 8 mounds. Sprinkle the mounds with the chopped pecans. Bake in a 375 degree F. oven for about 30 minutes, or until hot in the center.

Sweet Potato Puffs 2
3 cups cooked, mashed sweet potatoes
4 tablespoons melted butter
1 cup flaked coconut
1 teaspoon cinnamon
1 teaspoon salt
dash pepper
4 eggs, separated
Combine mashed sweet potatoes, butter, coconut, cinnamon, salt, and pepper. Blend in egg yolks. Beat egg whites until stiff peaks form; fold into the sweet potato mixture. Lightly pile into a greased 1 1/2-quart casserole.
Bake in a preheated 375° oven for 30 to 40 minutes, until set and top is golden brown.
