I couldn’t find a baked chicken and wild rice dish that did not include canned soup of some kind, so I made up my own.
2/3 cup uncooked wild rice blend
1 small can mushrooms
2 celery stalks, sliced
1 cup chicken broth
2 T soy sauce
2 T regular Mrs Dash plus extra for the chicken (or your favorite seasoning blend)
1 whole chicken, cut into pieces and skinned
Preheat oven to 350°F. Spray a 9x13” pan with cooking spray.
In a small bowl mix rice, mushrooms, celery, broth and seasoning.
Pour rice mixture into prepared pan; place chicken on top.
Sprinkle additional Mrs Dash over the chicken. Cover with foil.
Bake 1- 1 1/2 hours or til rice is tender. Uncover and let sit 10 minutes.
