Today has been declared National Deviled Egg Day, not by me but by whatever official proclamation makes it get listed on official holiday charts.
Happily, my kid still had to go to school. Anyone want to share a favorite Deviled Egg recipe?

Mash yolks with a fork and then add
mayo (I like miracle whip its sweeter)
mustard
a splash of apple cider vinegar
top with paprika
There must be a national day for everything in existence!
mayo, minced pickled jalapenos, juice from the jalapenos, cilantro, green chiles, pinch of mexican oregano and paprika. I have had this recipe in my box for YEARS.
I love deviled eggs, but have to watch the cholesterol.
* 12 eggs
* 1/2 cup mayonnaise
* 4 slices bacon
* 2 tablespoons finely shredded Cheddar cheese
* 1 tablespoon mustard

DIRECTIONS
1. Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.
2. Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Alternatively, wrap bacon in paper towels and cook in the microwave for about 1 minute per slice. Crumble and set aside.
3. Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon and cheese. Stir in mustard. Fill egg white halves with the yolk mixture and refrigerate until serving.

When my son went to college he ate well because he could cook.
My daughter didn't want to learn how until she became a wife but she has always been an excellent baker. (and she ate way too much peanut butter and ramin noodles in college!)
I enjoy them pickled eggs..ones that sit at the store in a big jar for a few months..LOL
Gee, I missed this yesterday... good thing my kids did't know about it - they would have made me make some, lol.... We LOVE deviled eggs around here - and my kids would live on them too if I let them!
My favorite is the "standby" with miracle whip, mustard, and vinegar. I just add the amounts to taste. I have played around some though by adding brown, dijon or spicy mustard. I've also used balsamic vinegar, which is my favorite - but my kids dont like as well - too much "zing" for them, lol!
I also add a little garlic to mine (the yolk mixture) when I make them. They are really good that way. Just be careful with it, especially if you use fresh garlic - it gets really potent fast, which doesn't bother me, but..... ;-)
