Alright, I know what you're thinking. But it really is the name of the stew. A little background. This recipe was found in a very very old cookbook when I was searching for civil war era dishes that could be cooked at campfire as well as home.
I tried this recipe even though I don't care much for cooked cabbage. My husband LOVES it. It is very filling without being full of fat or calories, even with the salt pork included. You could probably use smoked turkey instead of the salt pork, but I don't believe the taste would be the same.
Swamp Cabbage Stew
Ingredients:
1 lb salt pork, sliced into bite size pieces
1 large head of cabbage, halved and sliced into strips.
1 large yellow sweet onion, sliced (not diced)
1 tbsp cayenne pepperTwo large diced tomatoes or 1 large can of stewed tomatoes
¼ cup water
In dutch oven cook salt pork until done. Add all other ingredients to dutch oven, simmer over heat at edge of fire (or on low/med on stove top) for about an hour, until all vegetables are tender. Serve with cornbread or Johnny cakes.
