Everyone knows that there is always leftover turkey after Thanksgiving and Christmas dinners. So what do you do with it all? How many turkey sandwiches can you eat before you are tired of them? Here is another recipe that is from my mom that can help to use up all that leftover turkery.
Turkey Chowder
- 3/4 C finely chopped onion
- 1/3 C chopped celery
- 3 T butter
- 1 t salt
- 1 1/2 C diced turkey
- 1/4 t thyme
- 2 C broth
- 1/4 t pepper
- 2 C diced potatoes
- 1 bay leaf
- 1 C diced carrots
- 2 T butter
- 3 T flour
- 2 C milk
Cook onion in 3 tablespoons butter in large saucepan. Add turkey, broth, vegetables and seasonings. Simmer until vegetables are tender. Melt remaining butter in skillet; blend in flour. Add milk and cook over low heat until thickened, stirring constantly. Stir white sauce into turkey vegetable mixture and heat thoroughly.
