Corn pudding is a side dish popular in the South and the Midwest. Though I grew up in the Midwest, I hadn't heard of it myself until recently. I'm going to try it for Thanksgiving, if can I get it right before then. This recipe is from The Williamsburg Cookbook, Published by the Colonial Williamsburg Association, 1975, distributed by Holt, Rinehart and Winston. If you are familiar with corn pudding, do you have any suggestions for additions or changes to this recipe?
3 eggs
2 c. cream-style corn
1 1/2 tbsp. sugar
1/2 tsp. salt
1 c. bread crumbs (gluten-free, if you have celiacs in the family)
2 tbsp. butter, melted
2 c. milk
1/2 c. light cream
Preheat the oven to 350 F. Grease a 1 1/2-qt. casserole. Put a pan of water to boiling in the oven (allow for displacement of liquid by casserole).
Beat the eggs till they are light and fluffy. Stir in the corn, sugar, salt, bread crumbs, and butter. Add the milk and cream and mix well. Pour into the prepared casserole and place the dish in the pan of boiling water.
Bake at 350 F. for 50 to 60 minutes or until the custard is set.

I guess I'm okay. As long as I feel abnormal the day seems to be sunny.
I saw another recipe that was 1/2 creamed corn and 1/2 regular corn, that sounded good to me too, I like texture.

I would use Land O Lakes fat free half & half.
I think I'll give it a go.
