Cheese is an excellent source of protein, calcium, phosphorus, vitamin B12, and other vitamins and minerals. Those hard-aged cheeses, like sharp cheddar and asiago, are flavorful, but also higher in fat than softer cheeses like brie and feta. Since these pungent hard cheeses taste so strong, you should eat less of them and save the calories.
My favorite cheese is Sharp Cheddar.

for anything Italian: Mozzarella, Romano, some Parmesan, and Ricotta when needed.
for snacking cheese and crackers while watching football: a good variety with What Thins, Triscuits, and Fritos.
