This was a recipe a friend of mine was famous for back in the day. She would always whip these up after a long night of partying.
1 T butter
1 can sliced potatoes, well drained
seasoned salt
4 eggs
1 t water
1/4 cup jarred Pepperoncini peppers, chopped, along with additional juice from the jar
1/4 cup shredded Mozzarella cheese
In a large frying pan on medium high heat, add butter. Toss in potatoes. Sprinkle generously with seasoned salt.
Meanwhile, scramble eggs. Add water, peppers and some juice. When potatoes are nice and brown, mix in eggs. Reduce heat to medium low and finish cooking eggs, occasionally stirring.
When eggs are almost set, stir in cheese. Remove from heat.
I served these with a buttered bagel half.

I have never bought the canned potatoes before, but had some at a friends she deep frys them (the whole ones not sliced) for a few minutes and tops them with sour cream and chives delish :) just like a baked potato in seconds..

She made these one morning, and I have made them so many times since.
Maybe THIS is how I could use up my homemade peppers. Never thought of it til now. I've got about 5 lbs of Mozz.
