This dinner is ever so easy.
Ingredients:
1 Large Can of Water Packed Tuna
Bag of Salad Greens – I use Spring Greens
1/2 White
Onion, Cut into Strips2 Cloves Garlic, Minced
1/2 Red Bell Pepper, Cut into Strips
Black Olives
Olive Oil
Your choice of Oil & Vinegar Dressing
Sauté’ onion, red bell pepper and garlic in a little olive oil. Arrange greens on plate. Drain tuna and place over greens. Add sautéed ingredients. Garnish with olives.
I also add
ed Amy’s Organic Corn Chowder – just heat up, and whole grain bread with butter. You can use olive oil with ground pepper in lieu of the butter.

I love tuna salad and make it with some unusual things - I season the mayonnaise with a curry powder that i like (it is very mild) and I put scallion in it. I put tomato slices on the bread. It has to be on toast too.
