I adapted my mom’s famous recipe for the potatoes. Doesn’t get much easier than this one!
2 boneless skinless chicken breasts
your favorite chicken seasoning (I used Weber Kickin’ Chicken)
Sprinkle chicken generously with seasoning. Cover and refrigerate at least 4 hours.
In a large frying pan drizzled with olive oil, cook chicken til well browned on both sides and cooked through.
1 pkg frozen hash browns, thawed
1 can cream of chicken soup
8 oz Veleveeta, diced
1 8 oz container sour cream
1/2 cup shredded cheddar
Preheat oven to 350°F. Spray a 2 qt baking dish with cooking spray.
Mix all tades ingredients together. Scoop into baking dish.
Cover and bake 45 minutes. Stir and top with cheddar. Uncover and bake 15 minutes more, or til potatoes are cooked through.
Serve chicken with potatoes.
