Columbia Restaurant's 1905 Salad

Yield: 4 servings
2 ea Ripe tomatoes
1/2 ea iceberg lettuce head
1/2 c Ham julienned
1/2 c Swiss cheese jullienned
2 ts Romano cheese grated
1/4 c Spanish green olives pimiento-stuffed
Dressing:
1/2 c Spanish olive oil
1/8 c White wine vinegar
4 ea Garlic cloves minced
1 ts Worcestershire sauce
1 ts Oregano dried & crushed
Salt & pepper to taste
2 ts Lemon juice fresh
Tear lettuce into bite-sized bits.
Toss all salad ingredients together except for Romano cheese.
Dressing:
Mix garlic with oil, Worcestershire sauce & vinegar.
Mix in oregano, salt & pepper.
Beat light;y to form an emulsion.
Pour over sald thenm toss to coat well.
Sprinkle Romano cheese over salad & serve.
