MARINATED CUCUMBER SALAD
Here's a twist on an old stand by, marinated cucumbers.
1. Wash 3-4 cucumbers and score the outside with the tines of a salad fork. Then slice in nice even thin rounds. Make sure you taste the cucumber and don't use it if it's bitter. Your salad will only be as good as the ingredients you use!
2. Cut a red onion in half and thinly slice. Use as much or as little as you want.
3. Drain a can of large pitted black olives.
4. Put all of the above ingredients in a large mixing bowl and toss gently.
5. Last, add 4 oz. crumbled feta cheese.
For dressing:
3 Tbsp. olive oil
3 Tbsp. balsamic vinegar
Salt to taste
1/4+ tsp. black pepper
1/2 tsp.+ dried oregano
Shake and pour over the above. Allow to chill for at least 30 minutes and serve. Great with chicken or hamburgers.

Thanks for your comment! We LOVE olives at our house, never miss a chance to visit the olive bar at grocery store. Olives seem to turn up as an ingredient in a lot of my recipes.
