This is one of my favorite pasta dishes, with just a hint of heat from the jalapenos.
1 large boneless skinless, chicken breast
olive oil
garlic powder
Italian seasoning
1/4 cup butter
2 cloves garlic, minced
1/3 cup flour
salt and white pepper
1 cup half and half
1 cup pickled jalapeno peppers (in juice), minced
1/4 cup freshly grated Parmesan blend cheese
8 oz shredded Co-Jack cheese
1/2 lb pasta, cooked according to package directions (I used shells)
Drizzle chicken breast with oil. Sprinkle with garlic powder and seasoning. Cover and let marinate 4 hours.
Preheat broiler. Broil chicken til golden brown on both sides, and cooked through. Set aside.
Meanwhile, heat butter in a large frying pan on medium low heat. Add garlic. Saute til fragrant, about 1 minute. Whisk in flour and salt and pepper; cook a couple minutes while whisking.
Add half and half, continuing to whisk til mixture is smooth and creamy; stir in jalapenos and juice.
Remove from heat. Stir in cheeses a little at a time til nice and smooth.
Add pasta, stirring til well mixed.
Serve topped with sliced chicken breast.

Lune, I've also made it with velveeta if you don't have the co-jack or parm.
Thanks, Denise.
Karen, Fridays are perfect for pizza! A good ending to the work week, I bet.
And you need to start posting photos of this stuff! How am I going to "steal" your ideas without photos?
Nice visual: Scott As Dessert.
Thanks, Vivian.
This sounds good. I would like it (jalapenos rock!). Hubby probably would not (jalopenos do not rock!). Hehe.
I love spicy food myself. The spicier the better. I like it to be so hot that my nose starts running and sweating and I can't feel my lips. LOL
Um, Vicky? I rarely eat pot pies, and I would never nuke one beforehand! Ewww!
Jane, the sweat factor is about a 5. The cheese sauce keeps things mild.
Thanks, Joan.
Thanks for sharing this rx with all of us, especially me.

Exactly, Arlene.
I have a rigatoni, sausage and spinach recipe she may like.
I like pizza hut, Shelley!
Risa, wait til you see my pic of pizza I had in Reno. Slathered with jalapenos! It's the only way to go.
