Most of my recipes are really based on “just use what I have on hand,” with no specific amounts. So, I’ll list the ingredients I used in this one.
Ingredients
New Red Potatoes
Olive Oil
Red Bell Pepper
Garlic Cloves
Spring Salad Greens
Cucumber
Tomato
Black Olives
Gorgonzola Cheese
Oil and Vinegar Salad Dressing of your choice
Boil some new red potatoes in their jackets until soft. You really can’t go wrong here; because you can keep the potatoes whole in the salad or cut them up.
Sauté’ in olive oil - red bell pepper cut into strips along with a couple of chopped cloves of garlic.
Place packaged spring salad greens in large bowl. Top with sliced or chopped cucumber, chopped tomato, and whole black olives. Put boiled potatoes on top of that. Then put your sautéed pepper and garlic on top of that. Gently toss. Sprinkle on Gorgonzola cheese bits.
Sometimes I also make my own croutons for this, using older bread cut into cubes and sautéed in olive oil with garlic, parsley and oregano. Also, you can use some red onion in the salad, as well as sunflower seeds.

Luckily, even though our garden didn’t do too well this year because of drought, I was still able to use some produce from it – the garlic, tomato, and cucumber.
