A friend of mine has sent me several recipes appropriate for kids. Of course, I had to test the first one out to make sure they were good. And this cake was better than good, it was awesome!
I had recently bought a bunch of Macintosh apples from the Farmer’s Market so I started with this recipe, adding my own adaptations.
1 c vegetable oil
2 c sugar
3 eggs
1 1/4 t vanilla
2 c flour
1 t salt
1 t baking soda
3 c apples, peeled and diced
1 c chopped peanuts
Caramel Sauce
Preheat oven to 350°F. Spray 9 x 13 baking pan with cooking spray.
Mix oil, sugar, eggs and vanilla together in a large bowl til well mixed, about 2-3 minutes.
Sift together 2 cups flour, salt, and baking soda. 
Add dry ingredients to wet, beating well. Fold in apples.
Pour into pan. Bake 45-55 minutes or til toothpick inserted in the center comes out clean.
Caramel Sauce
1 c real butter
1 c sugar
1 c brown sugar
1 c evaporated milk
1 t vanilla (optional)
Combine ingredients in saucepan; bring to a boil. Boil for 5 minutes. Stir in vanilla. Pour over warm cake.
Sprinkle cake with peanuts. Let cool.
Slice and serve with whipped cream, if desired.
Variations: Top with shredded coconut, pecans, walnuts.

Vivian, after one bite, you will want a BIG piece. Trust me.
It was pretty good, Katrina. Next time, I might try a different recipe. It was too subtle... but it did go well with the cake.
Jessie, I thought of applesauce, but not sure how that would go with the apples already in there. Cutting the oil amount in half would probably work too, the apples really make it moist.
(I am actually sprinkling mine with coconut for snack tonight. Might he like that?)
