At one of my first jobs, one of my friends was so poor she could only eat rice. Oh, if only I would have known about this, I could have spared her all that. This is just as thrifty and will feed an entire family.
Your potato is your friend! Enjoy these unique creations...
INGREDIENTS/PREPARATION:
1 baking potato per person, cooked in Microwave for 5 minutes a potato or until desired softness is achieved. Many microwaves have a potato button. Push that for however many potatoes you have. Not recommended to cook more than three at a time.
TOPPINGS & WHAT TO DO WITH THEM:
It depends. If you are making "taco topped potatoes" then prepare 1 lb. hamburger, drain and stir in taco seasoning and cook as package directs. TOPPINGS can be made ahead of time and stored after use for the next day. Great for those families that eat at different times.
Top with the usual suspects: shredded cheese, salsa or taco sauce, sour cream/plain yogurt, green onions, chives, WHATEVER! Even refried beans would work. You don't even need the meat!
You can also use cooked chicken/leftover deli chicken and top the potato with it and garnish with ranch dressing, chives or anything else you can think of. Yes, cheese is always welcome. Again, you don't have to use meat. Veggies will work, too. You could even put a green giant cheesy veggie box warmed up over a potato. You decide!
Then there's the chili potato...
Top your potato with leftover chili (sans noodles) or canned chili will work wonderfully.
No, not low carb. But quick and nutritious. Besides, I think the potato gets a bad rap most of the time anyway.
