I love fusion cuisine- this one combines the wild rice of the north and wonderful Southern favorites like Andouille and black eyed peas.
1/2 cup wild rice blend (mine had wild rice, two kinds of brown and Himalayan)
olive oil
1/2 lb fresh Andouille sausage, ground
1/2 onion, chopped
2 cloves garlic, chopped
1 small (15 oz) can chicken broth
1 can black eyed peas, rinsed and drained
1 large tomato, diced
In a large pot or Dutch oven heat oil on medium heat. Add rice and cook for 5 minutes.
Stir in sausage, onion and garlic. Cook til sausage is browned, about 10 minutes.
Add broth and peas. Reduce heat to medium low, cover and cook 40-45 minutes, or til rice is tender.
Serve with diced tomato.
Variations: Add your favorite spices and herbs. Serve with Parmesan.

That sounds wonderful but while reading it....... a thought came to my mind.........
"Wouldn't some sour cream added taste great" I mean like a scoop of sour cream added to the center and then the tomatoes scattered around on top like you did. Yummy.
