Heartfelt thanks to Angela M. who told me about this recipe. For best results, freeze the cookies at least four hours or overnight.
"An ice cold drink (milk) and an Oreo cookie…"
16-18 Oreo cookies
2 cups of buttermilk pancake mix
1 1/2 cup of milk
2 eggs
4 teaspoons of oil
1 t vanilla
vegetable oil for cooking
chocolate syrup for drizzling
Preheat oil on medium high heat. To test oil, add a drop of batter and ensure it immediately begins to cook.
Combine pancake mix, milk, eggs and oil til smooth. Dip Oreos in batter, well coating both sides.
Cook til both sides are golden brown.

Drain on paper towel.

Drizzle with chocolate syrup. Serve with a tall glass of milk!

Variation: Dust with powdered sugar.
