After watching an episode of Mexico: One Plate at a Time this morning, I got inspired to make salsa, 2 ways.
I had some tomatillos, some heirloom tomatoes, onions, red jalapenos and garlic and got to roasting the tomatillos, onions, jalapenos and garlic. Once they were roasted, I mixed them with the heirloom tomatoes. That was one way. 
The other way was chopping up the tomatoes, mixing them with some fresh tomatillos, cilantro, garlic, and lime juice. 
Once I had the salsa made, I heated up 2 Multi Grain tortillas, and I rolled some cheese up with the 2 salsas - each tortilla had a different salsa.
The cheese melted and they were just delicious. Now that is what I call lunch.

Remove from the oven. Let everything sit until cooled. Peel the skins off the chiles, garlic and tomatoes. Put the whole thing in a food processor and puree, pulsing, until a coarse puree forms. Then add, by hand, some chopped raw tomato.
Very simple and comes out so good. If using tomatillos, pull the husk off first, then roast. Soo good and so simple.
I wish I had some fresh tomatillos right now. I have cilantro, limes and fresh garlic. I'd whip something up!
