Shark meat has a consistency like good pork. It's a very meaty fish. I've never made any "recipes" with it, since I like my fish simply prepared. Some lemon pepper and toss it on a grill or under the broiler is good. Or you can marinate it in olive oil and balsamic vinegar or rice wine with some chinese 5 spice and pepper, or a bit of soy sauce. Since it is a very fine tasting bit of fish you might want to keep it very light on dressing it up.
Treat it like you would Salmon. BUT DON'T EAT THE SKIN. It also makes a great part of a Jambalaya or Fish Stew. It is also good in a hearty noodle soup. Put it in the broth raw and cook it with the noodles.
I think Shark is best grilled. You don't really need a "recipe", I grill it and then serve it with fresh squeezed lemon and my version of tartar sauce, which is mayo, capers, lemon juice, freshly ground black pepper and a little onion powder.

No shark recipes here, they eat shark fin soup in Japan but I do not know how they make it.
Let us know how it turns out and be sure to keep a tooth - they are supposed to protect you from shark bite!
