I have gone veggi, and picked up a great book. However, I noticed that a lot of the recipes are with bocconcini and capsicum. Do you know what that is? I have no clue. Thanks my friends.

Michelle - As for taking the seeds out of the peppers I don't take them out. Whats the use of using a pepper if you have to take the seeds out of them because they're hot; why not just delete the hot peppers from the said menu???
If you really mean bocconcini - that is a cheese - Mozzarella di Bufala - made from buffalo milk, though these days it typically has cows milk added and in the US is usually 100% cows milk. The easiest substitution is fresh mozzarella, the golf ball to tennis ball sized balls of cheese packed in light brine.
But since you mentioned going veggie I wondered if you meant broccolini which is a variant of broccoli that has long slender stems with little broccoli floret type heads. This veggie is showing up in a lot of recipes and I found it was popular in Southeast Asia.

I've been vegetarian in the past. It was difficult for me to go vegetarian in those days (the early 1980's) but these days it is much easier as substitute foods can be found easily at supermarkets and health food stores. Good luck.
