what is the essence of summer? to me, it is mostly food and water. we're swimming in the lake, and swimming in the abundant produce and fruit from the area. lucky us!! we're so happy to be in a fruit belt. the lovely michigan blueberries, peaches, and other fruits spoil us with their deliciousness.
here's one of my favorite recipes for summer, a lovely peach upside down cake that wows anyone who is lucky enough to be sitting at your table. the best part? it is so easy! it is one of lillie's favorite things to make.
UPSIDE-DOWN PEACH CAKE
upside down part:
1/2 stick butter
3/4 c brown sugar
1/4 c cream or milk
4-5 peaches, peeled and sliced
melt the butter in a 10 or 12 inch ovenproof skillet - we have a lovely square cast iron pan that is our standard for this dessert. add the brown sugar and cream, stir until smooth. add the peaches.
cake part:
1/3 c butter
2/3 c sugar
2 eggs
2 t vanilla
1.5 c flour
2 1/4 t baking powder
1/2 t salt
3/4 c milk
beat together butter and sugar; add eggs and vanilla and beat well. mix your drys in a separate bowl and then add in to the wets. mix well, add in remaining milk. spoon gently over the peaches. bake at 350 for 30 minutes or so. cool for 5 minutes, flip onto a large platter. serve with freshly whipped sweetened cream.

(laughing) Well, not particularly healthy with brown sugar, butter and cream...and then whipped cream on top!
But we only live once.
Paulette...with all due respect, SC peaches cannot come close to comparing with MI peaches. How do I know? I grew up on a Michigan fruit farm. Am I biased? Nah.
