Here is a great money stretching recipe. Easy and does taste great!
You will need:
1 can (15 oz) Sloppy Joe Sauce
12 Soft Tortilla's
1 lbs Ground Beef
1 can (16 oz) Refried Beans
1 c. Shredded Cheddar Cheese
Directions:
Grease or prepare an 8X8 or 9" pan.
Put sloppy joe mix in a bowl. Dip two tortilla shells in it. Soak both sides and then set aside. These are your top layer.
Brown and drain the ground beef. Add the sloppy joe mix to the beef. Let simmer on low for 3 - 5 minutes.
Put 2 - 3 tortillas on the bottom of the pan. Make sure you cover the bottom.
Spoon about a third of the meat mixture on the tortilla shells.
Add another layer of tortilla shells
Spread half the refried beans on the shells --->*TIP* Easier to spread if you heat a little in the microwave.
Next layer 1/3 of the cheese
Repeat the layering again. Shells, meat, beans and then top with the two shells you set aside at the start.
Then the remaing cheese. (personally, I wait until the last 10 minutes to add the cheese.)
Bake in a 350 degree oven for 30 minutes or until it bubbles like lasagna.
