I had a request for a recipe that uses Wheat flour, pumpkin and pecans. This is a recipe that I have used for years. It is a great whole wheat muffin and it is light and fluffy as long as you don’t over mix it. The trick is to only stir until moistened. My family used to love these. I have not prepared them for a few years. Now I too am going to make them again. They were wonderful but we just got tired of them. We used to serve them warm fresh from the oven. Yummy!
Whole wheat is so good for you. This recipe is a great way to add whole wheat to your diet while not giving up any of the taste you are accustomed too. Enjoy!
Pumpkin Nut Muffins With Whole Wheat Flour
1 cup whole wheat flour
¾ cup white flour
1/3 cup sugar
1 Tablespoon Baking Powder
¼ teaspoon salt
1/3 cup powdered milk
Combine the dry ingredients in a bowl
1 beaten egg
½ cup water
¾ cup pumpkin (canned or cooked)
¼ cup oil
½ cup chopped nuts (any kind)
Combine remaining ingredients together and add them to the dry ingredients all at once. Stir just until moistened. Batter will be lumpy. Do not over stir. Lightly grease muffin cups or line with paper. Fill about 2/3 full. Bake in preheated 375 oven for 18 - 20 minutes or until golden brown. Remove from pans.

Now, I don't have powdered milk. Any suggestions? Also, can I use all whole wheat flour?
I always grind my own wheat. I often use only whole wheat but the white flour in this recipe makes it so much lighter and fluffier thus makes it better. However it is good with just whole wheat. It is heavier and less fluffy but very good.
I always use powder milk. We use alot of powder milk in recipes. So I cant give you another solution to that problem. Sorry.
Unless you are allergic or lactose intolerant, I would recommend keeping some powdered milk in your pantry. It keeps as well as any other pantry staple and is a very good way to boost protien and calcium levels without significally altering the taste or texture of most baked goods.

LOL Nope I purchase my wheat from out west. I purchase alot at a time as we do think that wheat is that good for us.

Seriously, though, I have bookmarked this recipe because it sounds so marvelously wonderful. You have NO IDEA how therapeutic your recipes have been. My mother, elderly, can't drive any more but loves cooking and this is something we do together. She loves this recipe and I love hearing her stories :) while we cook. Thank you!
