I usually just post photos of my dinners, but today we actually had recipes, so I figured you all might like to see them.
Dinner today was Sloppy Joes over roasted potatoes.
Crock Pot Roasted Potatoes: based on the recipe in Not Your Mother's Slow Cooker Cookbook by Beth Hensperger.
About a pound of new potatoes (from the local farmers market) washed and scrubbed.
2 cloves of fresh garlic
1 tablespoon olive oil
a pinch each dried rosemary, dried thyme, salt and pepper
Toss all ingredients together, until the potatoes are evenly coated. Spread the potatoes as evenly as possible in the crock pot. Cover and cook on high for 2 1/2 to 3 1/2 hours, until potatoes are tender.
I tried out Reynolds Slow Cooker bags with this one - they worked fairly well. Not perfect - I still had to wash out the crock but there was nothing stuck to it, just a little water and oil.
Sloppy Joes - based on L. Hauser's recipe from AllRecipes.com
1 lb ground chicken
1 cup ketchup
1/4 cup water
2 tablespoons brown sugar
2 teaspoons Worchestershire sauce
2 teaspoons prepared mustard
1 teaspoon garlic salt
1 teaspoon french onion soup mix (allrecipes called for onion powder, but I didn't have any)
1/2 teaspoon cumin
(Allrecipes used ground beef and did not include the cumin.)
Brown meat in a large skillet or sauce pan and drain. Mix together all other ingredients. Mix sauce with meat, bring to a boil. Reduce heat and simmer for 30 minutes.
